Thinking about making your loved one a plant-based dinner that is good for the planet, your pocket, takes no time to prepare and is overflowing with love and taste? See my suggested menu below.

Start with a pate, either a mushroom or walnut olive with some lavosh crackers. Super-fast and tasty. My drink of choice is a cosmopolitan made with fresh pomegranate juice.
Main course is pesto pasta with sundried tomatoes. You can buy fresh basil at the markets I happen to have some growing in my garden. Each serving has 12 grams of protein and lots of iron.
For desert I give you two options. Molten Lava cake which is a bit more technical and truffles – super easy and divine. I gave these to my yoga students this morning after class and the LOVED them.
I truly believe that when we cook with full presence, we infuse our dishes with love and this is felt by the ones we feed. There is not better way to nourish the one you love than with plant based whole foods.
